I have lots more fun writting Severus than Hermione. Why?
I have a more complete picture of him than hers. It is more easy and fluid.
Maybe my inner man is more developed? Duno. I dont have a clear answer.

My inner man must be better developed too. Mind you, I'm in the whole thing to write Severus and Hermione tends to be merely along for the ride.

Possibly because we know what he is like as an adult, whereas, she as an adult remains a somewhat unknown quantity.

I wouldn't ask me, half the fandom accuses me of writing Hermione OOC.

I think she would be impatient as a sick person, and would not readily take advice, or follow doctor's orders. She'd be out of bed before she should be, and might relapse as a result. She would get frustrated with any limitations.

Incidentally, I do not agree that she is a bona fide intellectual as too many writers depict her. She is studious. I see no canon evidence that she is a brilliant intellectual. When writers depict her as such - that is Mary Sue. With the writers usually deludedly believing they too are very clever. Self insertion of that kind effortlessly proves to me that they are not.
